Quick and easy with a tasty bacon-mustard vinaigrette dressing.
Ingredients
- 1 bag (1.5 lbs.) of Simply Spuds™ Steamables™Red Potatoes
- 5 slices of bacon (diced and cooked until crisp)
- 2 tbsp. bacon drippings
- 1 ½ tbsp. all-purpose flour
- 1 tbsp. granulated sugar
- 1 tsp. salt
- 1 tbsp. prepared mustard
- ½ cup cider vinegar
- ½ cup water
Preparation
- Microwave Simply Spuds™ Steamables™ in their bag according to directions.
- Use caution when removing the bag from the microwave; package will be HOT!
- Carefully cut the bag open and pour the potatoes into a serving bowl.
- Cut potatoes into slices.
- Cook bacon and set aside.
- Heat bacon drippings; blend in flour, sugar, salt, and mustard.
- Gradually add vinegar and water, stirring constantly until smooth.
- Add potatoes and heat through, gently stirring to mix.
- Sprinkle with reserved bacon and enjoy!
