These potatoes are delectably accented with a scent of pesto and are easy to make.
Ingredients
1 pound small red potatoes
2 tablespoons prepared basil pesto
2 minced garlic cloves
Salt and Pepper
Preparation
Quarter eight small red potatoes, uniform in size (about 1 pound). Place potato pieces in large bowl. Drizzle with 2 tablespoons prepared basil pesto and 2 minced garlic cloves; toss to coat. Arrange potato pieces in a single layer on nonstick baking sheet. Roast 15 to 25 minutes, or until golden brown and tender (cooking time will vary depending on size of pieces). Season to taste with salt and pepper.
