A new and healthy twist on an old classic. Personal pizzas with veggies have never been so good – or so easy to make! Just pop these smashed potato pizzas in the oven and wait.
Ingredients
- 1 pound red potatoes, cut into chunks
- 1/2 cup ranch dressing
- 1 pizza dough (about 1 pound)
- 1 1/2 cups shredded Mozzarella cheese
- 3/4 cup chopped cooked chicken
- 1/3 cup bacon bits
- 1/3 cup minced red onion
- 3 tablespoons shredded Cheddar cheese
Preparation
1. Place potatoes in a pot of water and boil for about 15 minutes or until potatoes are tender when pierced with a fork. Drain well in a colander.
2. Mash until smooth and stir in ranch dressing.
3. Divide pizza dough into 6 equal pieces. Roll each into a ball, then press each into a 5-inch circle on a lightly floured board.
4. Place pizza dough circles onto 2 large baking sheets lined with parchment paper. Spread equal amounts of the potato mixture onto each dough circle.
5. Sprinkle with equal amounts of Mozzarella, chicken, bacon bits, and Cheddar.
6. Bake at 425°F for about 15 minutes or until dough is lightly browned.
