- 5 cups Idaho potato, diced, boiled, and drained
- 1 cup sour cream
- 2 teaspoons Kosher salt
- 1 clove garlic, minced
- 1/4 cup shallot, minced
- 2 cups ricotta cheese
- 2 cups cheddar cheese, grated
Combine all ingredients except cheddar cheese.
For home use: place in a 9×13 baking dish, top with cheddar, and bake at 350 degrees for 40-45 minutes.
For food service professionals: Bake in a hotel pan and hold warm. For service: dish into individual ramekins, top with cheddar and place under broiler until cheese is bubbly.
Serving Ideas: Placing into individual serving dishes reduces waste and makes a nice presentation. It is just as easy, however, to scoop the casserole onto the dish and still get a nice look.
