Ingredients
4 medium (5 to 6-ounce) russet potatoes
¼ cup diced fresh yellow and/or red tomatoes
1 tablespoon chopped fresh basil
1 teaspoon chopped fresh oregano
1 ½ teaspoons olive oil
salt and pepper
Preparation
With fork, pierce skin of potatoes in several places. Bake in preheated 400-degree oven 40 to 50 minutes, (or microwave on HIGH 8 to 10 minutes, adjust time according to the wattage of your microwave) or until tender when tested with fork. Slit and fluff potatoes and top each with tomatoes, basil and oregano. Drizzle each with olive oil. Season with salt and pepper.
