Ingredients
- 1/2 cup Olive oil
- 4 cups Onion, cut in small dice
- 4 pounds (10 1/2 cups) Yellow flesh potatoes, cut in small dice
- 3 pounds (8 cups) Tart eating apples, such as Fuji or McIntosh, cut in small dice
- 4 tablespoons Chopped fresh thyme
- Butter as needed
- Salt and black pepper as needed
Preparation
1. In sauté pan, heat oil and sauté onions over medium high heat about 5 minutes, or until translucent. Add potatoes; sauté about 10 minutes, or until half cooked. Add apples, thyme and butter; season with salt and pepper. Sauté 10 minutes, or until potatoes are lightly browned and cooked through. Yield: 12 cups
Convenience Tip: Substitute 4 pounds refrigerated precooked diced potatoes for fresh potatoes. Sauté onions; add potatoes, apples, thyme, butter, salt and pepper. Sauté for 10 minutes, or until tender.
